Raw Cacao Granola Recipe
I use this raw Cacao Granola recipe all the time - it is quite possibly my favorite granola. At least right now.
Granola is very easy to make yourself and is so versatile. You can make it to suit your tastes, or leave it plain and dress up each bowl as you make it - a great way to keep everyone in the family happy!
- 1 cup buckwheat groats
- 1 cup walnuts
- 1 cup raw almonds
Soak all three overnight, keeping the buckwheat separate from the nuts. In the morning, drain all three. Place the almonds and walnuts in the food processor and pulse a couple times. I like mine with pretty big chunks so I don't process it very much. If you prefer smaller chunks, you can process it more.
Place all in a large bowl and add 1/2 cup agave, 1/4 cup (or more!) cacao nibs, and about 2 tsp. of almond extract. If you like, you can also sprinkle with a bit of sea salt to really set off the flavors.
Mix everything up really well, then spread out on non-stick dehydrator sheets. Dehydrate for about 12 hours - I usually just put it around 104 degrees for the entire time. You can check it as it gets near 12 hours, take it out when it is to your desired crunchiness.
